ORIGIN: Adelaide Hills, Echunga region. Grower is David Blows. Select harvest overnight on 11th April 2021.
FERMENTATION: Open fermenter with gentle plunging and cap management over 18 days.
MATURATION: The wine was pressed off of it’s skins on 30th April 2021 to a combination of new (10%) and older French puncheons for eight months before a single filtration then bottling. This wine has been made with minimal intervention or additions.
ANALYSIS: Alcohol 13.9% v/v, Sugar <0.9 g/L (dry), pH 3.68, Titratable Acidity 5.50 g/L
